Part of Project Put Together is whipping my eating habits into shape. Working from home means you don’t get a real lunch break, and the boss side of yourself is always warring it out with the employee side of yourself. For me this means I work through breakfast and lunch most days, only stopping for food when my brain can’t function any more. I know, not smart. That’s why I’m trying to change it!
So to solve this problem, I have to come up with a bunch of stuff I can cram in my face that doesn’t require a lot of preparation, can be eaten while I’m typing, and will also be good for me.
The first thing I went for was a breakfast smoothie. My friend Kim brings me frozen produce a lot, because I am lucky and she loves me, and I got this enormous bag of frozen pineapple. I mix that up with a couple of other fruits – strawberries, mangoes, blueberries, depending on what I have around or what needs to get used up – toss in a little drinkable yogurt I have on hand for Atti, and fill with a mix of juices until nearly to the top of the frozen fruit.
The frozen fruit is ripe enough that between that and the yogurt I don’t need anything else for sweeteners, and I don’t need ice or ice cream since the fruit is doing that job all by itself.
Bonus – Atti loves them. This same kid who would rather go to time out three times in a row than eat a piece of watermelon is drinking his fruit and asking for more.
