
Edamame is the immature bean inside a soypod. If these little guys had been left alone they would have grown up to be tofu, but in their current state they’ll be my lunch. I buy packs of frozen edamame at Trader Joe’s right next to the frozen peas, and then when it’s time for lunch I pour them in a pot of salted boiling water and eat them with lots of butter.
This is a fantastic way to get more protein in your diet, and they’re so filling that a bowlful of them will keep me from snacking come 4 o’clock.
I add them to fried rice!
