Bear’s favorite dessert in the entire universe is the humble sugar cookie. But as most people are with things they love so much, he is filled with very passionate opinions about it. It has to be thick, and it has to be fluffy, it has to be bursting with vanilla flavor, and royal icing will do in a pinch but buttercream frosting is what is really ideal. When we were in college the vending machines were full of this one kind of sugar cookie with neon pink icing, and he has been trying to create that cookie ever since. I think he’s finally cracked it.
Fluffy Sugar Cookies
2 C sugar
1 C unsalted butter
2 eggs
4 tsp vanilla
1 C sour cream
2 tsp baking soda
1 tsp salt
2 tsp baking powder
5 C flour
Beat together the butter and sugar, then add in the eggs. Mix the wet ingredients together in a separate bowl, then mix the dry ingredients together in another bowl. Alternate adding the wet and dry ingredients to the egg mixture as you beat it all together.
Roll the dough out on a floured surface, adding a little more flour as necessary to keep it from sticking to the board, and cut out shapes as desired.
Bake at 375 for 8 – 10 minutes, or until fluffy and golden brown.
Buttercream Frosting
4 C powdered sugar
1 C butter
1 tsp vanilla
1 or 2 T whipping cream
Mix the butter and sugar together, and then beat until fluffy. Add the vanilla and cream, adding as much cream as necessary to get the right consistency for spreading.
Personally, I prefer royal icing on my sugar cookies, and I had a great idea about that I’ll share tomorrow, perfect for Valentine’s Day.
