This week has been bonkers. Monday I had an interview with a reporter and then I had to drive three hours each way to chase down medical records, Tuesday I did a podcast interview, yesterday I had to drive an hour away for an appointment with Atti’s pediatric neurologist, and then today was his IEP. I am worn out and worked over and at times like these I long for comfort food. Which for me always comes back to fried food and cheese. I had this appetizer at a restaurant years ago and it’s never left my dreams. It’s so simple you need no recipe, but it is delicious and great to set out on a table surrounded by friends as you all dive in together.
Fried Flatbread Appetizer
Flatbread. I used Naan this time, but you could really use just about anything. Just starch that tastes good and can get the cheese in your face.
Chevre goat cheese.
Good Marinara.
Cut the flatbread into strips or triangles. Heat up a few inches of vegetable oil and when good and hot, fry the flatbread for 45 seconds or so on each side. Golden brown is what you’re aiming for. Remove with tongs and let drain on a plate covered in paper towels.
Warm up the marinara.
Place the chevre cheese in a bowl and pour the marinara on top. You could also cut the cheese into rounds and spread it around the bowl like I did this time so that friends don’t have to fight over the precious middle.
Dunk the flatbread in the cheese and sauce and all the world seems right again.
Appetizing indeed. I wonder how it will taste like with pesto cream?
